The Distribution Centre at the CFC brings in a lot of fresh fruit for the local school’s breakfast programs. As a result we occasionally find ourselves rich with slightly overripe bananas to use up. As a result, this banana bread has become a regular treat after our Monday Dinners or on the side of our Thursday Wellness Breakfast. If you don’t have any coconut milk around, feel free to substitute regular milk. Also the pumpkin seeds can be substituted with any combination of nuts or seeds you have on hand. We often use almonds, walnuts, pecans, sunflower seeds, or sesame seeds in any combination.
