Peach season is in full swing and there are many ways to enjoy them.  This cake comes together quickly and easily but, as we discovered at our 60+ Lunch, is a real hit with your guests.  As the peaches are lightly cooked in caramel before the batter is added and cooked in the oven, it’s a great use for peaches that might be slightly under-ripe or firm.
