Kate’s Kitchen #26 | Bubble & Squeak

This week Kate gives us her answer to the perennial Thanksgiving problem…what to do with all those leftovers! Bubble and squeak is a traditional English breakfast in which you fry up your leftover vegetables and top it with an egg. How easy is that?



  • 2 cups mashed potato
  • 1 cup mashed veggies
  • 1 tablespoon butter
  • Salt and pepper
  • Optional additions: ½ cup peas, ⅓ cup cabbage, 2-3 finely chopped scallions, fried egg


  1. Combine mashed potato and mashed veggies in a large bowl, the potato acts like the glue that holds it together.  Mix everything together into a big thick kind of dough.
  2. Melt butter in a non-stick skillet over medium heat, add the mixture to the pan, and press into a flat pancake or make mini pancakes with your hands. Let cook for 5-7 minutes without touching.
  3. Use a spatula to check the underside of the pancake. When it is golden, it is time to flip it. After you flip the pancake and if it falls apart you can always squish it back together! Brown the other side for 10 minutes.
  4. Once you have a golden crust around the pancake turn off the heat. Serve with baked beans or a fried egg on top!
