Kate’s Kitchen #5 | Asian Chicken Salad in a Jar

A mason jar is a great container to mix a tasty salad in. Just pop on the lid, put it in the fridge, and it’s ready to go when you are.

YIELD: SERVES 1

Ingredients

  • 2 to 4 tablespoons of Asian Ginger Dressing (see recipe below)
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1⁄4 cup diced onion or green onions
  • 1⁄4 chopped red bell peppers or roasted red peppers
  • 1⁄4 cup mandarin orange segments
  • 1⁄2 cup cooked noodles (soba or rice)
  • Cubed cooked chicken, to taste
  • Chopped or slivered almonds, to taste

Method

1. Add Asian ginger dressing to bottom of mason jar.
2. Add layer one: crunchy carrots and cabbage.
3. Add layer two: red peppers and onions.
4. Finish with layer three: noodles, orange pieces, almonds, and chicken.

Variations

• Add cold steamed edamame beans to layer two. Edamame beans are soft young soybeans that are often sold in their pods. To cook edamame, you need to shell the beans first and then lightly steam them for a few minutes. These beans are delicious and are often found in Asian cooking.

YIELD: MAKES ABOUT 1 1⁄2 CUPS

Ingredients

  • 1⁄3 cup white wine vinegar or rice vinegar
  • 1⁄4 cup olive oil
  • 1⁄4 cup reduced-sodium soy sauce
  • 1⁄2 cup sesame oil
  • 2 tablespoons honey
  • 2 tablespoons minced peeled ginger root
  • 3 cloves garlic, minced

Asian Ginger Dressing

Method

1. Combine all of the ingredients in a jar, seal, and shake to blend. Store any leftover dressing in the fridge for 7 days. Shake before using.
