Following a Monday Dinner we served these Pumpkin Oat Squares and one of our participants brought her young son to the kitchen afterwards to ask what was in them. He was a little dismayed when I told him that we had made them with roasted butternut squash since he had been previously convinced that he disliked squashes in all forms.  I’m happy to share this recipe here as I understand he would like to make them at home with his mom.
